Shilo is a place where history runs as deep as the vines in our rocky, terra rossa soil. For nearly 400 years, before the Temple was built in Jerusalem, Shilo served as the religious capital of ancient Israel, housing the Tabernacle and the Ark of the Covenant (Joshua 18:1). . This sacred site, nestled in the central mountains of Israel, was the center of national life and spiritual assembly.

The connection between Shilo and viticulture is profoundly biblical:

  • A Land of Grapes: The grape was one of the seven blessed species of the land of Israel. Archaeological finds, including numerous ancient wine presses, attest to a flourishing winemaking culture here thousands of years ago.

  • The Dance in the Vineyards: The book of Judges records the celebration of the annual festival of Tu B'Av (often compared to a Jewish Valentine's Day) with maidens dancing in the vineyards of Shilo (Judges 21:19).

Today, we stand on the same high-elevation, sun-drenched hills (650–900 meters above sea level) where the patriarchs and prophets once walked. This unique terroir—rocky, mineral-rich soil, intense Israeli sun, and cooling Mediterranean breezes—provides the perfect, challenging conditions to grow exceptional, concentrated grapes.

Every sip of Zimmerman Estates wine is an opportunity to taste a piece of history—a blend of ancient biblical significance and a modern dream realized on the sacred hills of Shilo.

Welcome to Zimmerman Estates, where every bottle is a testament to the land, history, and spirit of Shilo, Israel. Our wines are not merely beverages; they are a living, breathing expression of one of the most significant and ancient sites in the biblical heartland.
